Breakfast at Beacon: Eggy Broccy Muffins!

I am SO excited to share this recipe with you because not only does it taste amazing- it’s easy to make and leaves you feeling full and satisfied. The site Live, Love, Nourish has provided us with this delicious breakfast recipe, The Eggy Broccy Muffin, to help us power through our mornings.

At Beacon, we talk a lot about the important of having enough protein at breakfast in order to stabilize blood sugar levels and curb those sugar cravings.  Well, The Eggy Broccy Muffins do just the trick! Packed full of protein and vitamins – we find they are an epic way to start the morning right…

The other good news? This recipe only calls for 5 Main Ingredients:

  • 6 large eggs
  • 2 tbsp of nut/plant based milk
  • 12 cherry tomatoes
  • 4-5 chopped broccoli florets
  • 2 spring onions
  • And of course salt and cracked black pepper!
Whisk together the eggs and nutmilk, add the veggies, salt and pepper, spoon mixture into muffin cups or greased muffin tray. Than pop it in the the pre-heated oven at 180°C for 20-25 minutes and it’s done. Easy Peezy!
